Tia's Honey-Rosemary Chicken
2 Tablespoons Olive oil
5 cloves of garlic
4 boneless, skinless chicken breasts
8 cherry tomatoes
3 dried chiles
4 3-inch sprigs fresh rosemary
4 Tablespoons balsamic vinegar
Preheat oven to 425 degrees. Place 1 T. olive oil and 5 cloves garlic in oven-proof skillet and place in oven for 5 minutes. Remove pan from oven and place rosemary sprigs in pan. Salt and pepper one side of chicken, and drizzle with honey. Place chicken breasts in pan honey side down, and repeat with salt, pepper and honey on the side now up. Place cherry tomatoes in skillet and drizzle all with 1 T. olive oil. Bake 25 min., basting occasionally with pan juices.
Remove chicken from pan, placing chicken and vegetables in another dish. To the pan juices, add balsamic vinegar, cooking over high heat for 3-4 minutes. Drizzle on chicken and serve.
