Tia's Famous Chili

1 lb. leanest ground beef
1 medium yellow onion, chopped
1 clove
garlic, minced
1 6 oz. can tomato paste
1 28 oz. can crushed tomatoes
2 c. water
2 15 oz. cans kidney or pinto beans
1 2.25 oz. can Ortega roasted mild chopped chiles
2 t. chili powder
1 tsp. cumin


In a large saucepan or soup kettle, brown beef over medium heat.  When it begins to change color, add onion and garlic and cook until meat is browned and onion is wilted.  Drain excess fat.
Add remaining ingredients to pan, combine well and bring to boil.  Reduce heat to a simmer, stir, and cook 30 min.  Let sit for a few minutes before serving. If you want to ‘kick it up a notch’ add some sliced jalape
ños or finely diced chipotle chiles in adobo sauce. Salt and pepper to taste.
