Pork Tenderloin (Carnitas) for Soft Tacos


2 lb. pork tenderloin, trimmed of fat and silver skin

1 - Onion, peeled and coarsely chopped

1 – 16 oz. jar Salsa Verde (green salsa)

Salt, pepper and dried oregano


1.    Liberally salt and pepper meat, and sprinkle all sides with dried oregano.

2.    Place meat in Crockpot

3.    Cover meat with chopped onion

4.    Pour salsa over meat


Cover and cook on ‘low’ setting for 6 hours. Remove meat and shred with two forks or your fingers. Use for soft tacos with corn tortillas that you have microwaved with a wet paper towel for 30-45 seconds. Tastes great topped with cilantro, sour cream, shredded cheese. Pick up some refried beans and Mexican rice from your local Mexican restaurant, too!
